Abstract

This paper aims to present to high school students the importance of natural pigments; from their nutritional properties, to their chemical properties. In addition experiments were conducted, extracting natural pigments from vegetables. Based on these experiments, the main chromophores, the structural formula and the polarity among the different solvents were studied. The study was conducted in Glorita Portugal State College, in a 1st year High School class, with a total of 25 students in the morning shift. The results of the investigative questionnaire show that students have previous knowledge and from this the theme continued with an experiment, which students developed, generating discussion of its realization. The study shows that experimentation in the classroom can be a facilitator at the junction of practice with theory.

O presente trabalho tem como finalidade apresentar aos alunos do Ensino Médio a importância dos pigmentos naturais; desde suas características nutritivas, quanto químicas, além da experimentação, extraindo pigmentos naturais através das verduras, assim como também seus principais cromóforos, formula estrutural e sua polaridade em meio a diferentes solventes. Foi realizado no Colégio Estadual Glorita Portugal, numa turma de 1º ano da seria do Ensino Médio, num total de 25 alunos, no turno matutino. Os resultados do questionário investigativo mostram que os alunos têm conhecimentos subsunçores. A partir disso a temática prosseguiu com a experimentação, onde os próprios alunos a desenvolveram, gerando discussão na sua realização. Diante disso, a experimentação em sala de aula, pode ser sim facilitadora, na junção da prática com teoria.
