The Chemistry of Mayonnaise: A Designer theme for Colloids Teaching

The central purpose of this paper is to present dynamic alternatives to the construction of colloids concepts from different teaching procedures focusing on experiments on the production of mayonnaise. The focus on experimentation is justified as a strategy to promote activities such as construction of hypotheses, data analysis and obtaining conclusions. The text Nutritional Value of Mayonnaise guided the actions developed through interactive reading, analysis and discussion of paragraphs. These results from this research allow us to conclude that: The theme works as a previous organizer, allowing a consistent pedagogical approach with the cognitive students' development facilitating meaningful learning. The realization of experimental activities and work with text develop reflection and negotiation of meanings and awakens the interest in Science, making more objective and significant chemical content. The teacher has the purpose of mediation promoting conditions for the understanding of activities in order to construct conceptual relationships to justify the phenomenon that students are studying, promoting the development of their own knowledge, from facts, observations and analysis. Regarding to our training it has consolidated the importance of the teacher's mediating role and the necessity for our educational performance always reflecting, developing and using diverse strategies to develop the scientific capacity of our future students.
