Abstract

The term Biocatalysis or biotransformation, generally encompass the processes in which a biological catalyst is used for the conversion of a substrate in a limited number of enzymatic steps. The papaya (Carica papaya) is the family Caricaceae, its fruit, known as "papaya", contains biologically active compounds. This article is intended to verify the biotechnological potential of enzymes found in samples of papaya stalks as well as, the use of immobilized cells in order to perform numerous reactions, because they can be reused by optimizing the reaction process.
