Determination of organic acids in tropical juice fruits by Capillary Zone Electrophoresis.

In the present work an analytical method is proposed for quantify organic acids employing Capillary Electrophoresis Zone in tropical juice fruits (rose apple, jabuticaba, hog plum and mangaba) acquired in the places located in Itabaiana and Aracaju. Organic acids present in fruits influence their taste, odor and stability. Currently, the study of organic acids is essential, since Brazil is the third largest fruit producer in the world. The state of Sergipe has also featured in the exportation scene of orange. Optimized separation was achieved within 6min using silica capillary of 75μm d.i., separation voltage of 8kV (36mA), and a buffer consisting of 100mmol L-1 boric acid (pH 10,00) and 0.5mmol L-1 de CTAB.Downloads
