Simulation of the operational dynamic of an process of packing and palletizing of breaded chicken steaks: a case study

This work was aimed to implement a computational model for simulating the operational dynamics of the process of packing and palletizing chicken steaks. The model of dynamic type, discrete and stochastic was implemented in the simulation software Arena®. As comparison parameter between the data obtained from the system and generated by model was chosen the NBS variable (Number of Boxes of Steaks produced during a work shift). At model validation, according to Analysis of Variance and of Tukey Test, it was not detected statistical differences between values obtained of the real system and those generated by the model. The simulation results showed that can be dispensed without loss of production, three employees of process of packaging and palletization.
